Meal Plan With Me: 11.15.20
Happy weekend friends! Almost every Sunday, I love to start my day with a cozy cup of coffee, curled up on the couch while I plan out meals for the week. I meal plan (at least dinners) pretty religiously. When I don’t take the time to plan out meals for the week, I feel off balance and totally out of whack. Meal planning helps to seamlessly endure the week and also gives us meals to actually look forward to.
I have to add that I love to cook, so meal planning and finding new recipes is fun for me. That’s totally okay if cooking isn’t exactly your thing, but you can certainly hash out a quick plan that will still keep you organized for the week!
Since I already plan every week, I figured I would start sharing my weekly meal plans with you too! I am currently living with my parents, so I cook for five of us. These meals will typically be enough for five, but tailor that to however many you are cooking for by halving or doubling the recipes.

Monday
Vegan Sweet Potato Pasta + Kale + Spinach from Orchids + Sweet Tea
Notes: I’ll probably swap for a non-vegan dish by using cheese instead of nutritional yeast and I’ll use a whole wheat pasta.
Tuesday
Baja Fish Tacos + Cilantro Lime Rice from The Kitchn
Notes: I’ll make a batch of cilantro lime rice with frozen bags of rice from Trader Joe’s and add some chopped cilantro, salt, a hint of butter, and juice from one lime.
Wednesday
Sausage Stuffed Acorn Squash from Well Plated
Notes: I’ll be using a spicy chicken sausage, but feel free to use pork or even just ground chicken/turkey/beef and season accordingly.
Thursday
Broccoli Cheddar Soup from Cookie and Kate
Notes: I love to make a huge batch of soup to store for leftovers through the week/weekend.
Friday
Teriyaki Meatballs with Crunchy Cabbage Salad from Budget Bytes
Notes: I LOVE Budget Bytes! Her recipes are so simple and super affordable with ingredients you can get from just about any grocery store (including Aldi). I’ll probably sub ground turkey for the ground pork for a leaner meatball.
Treats
We’ve got a handful of brown bananas this week so I’ll be making this Healthy Moist Banana Bread recipe from Gimme Delish.
Grocery List
We tend to eat out, make homemade pizza, or plan on leftovers for weekend dinners so I don’t plan those out to allow for the flexibility.
